Raw cashew nut is bought on three numbers: moisture, nut count per kilogram, and kernel outturn ratio. Outturn — the share of a lot that emerges as whole kernel — is the one that decides whether a purchase makes money, and it is the one most often estimated rather than measured.

We cut-test incoming lots and report outturn, moisture and defect rates against every consignment. Buyers get the numbers, not an assurance.
