Most roasted cashew on a supermarket shelf was grown in West Africa, shipped raw to Asia, processed there, and shipped again. Every one of those legs adds cost and carbon, and removes value from the place the crop came from.
Roasting and packing at origin shortens that chain to a single leg. It also means the kernel is roasted closer to harvest, and the brand on the pack can say exactly where it came from — and prove it.

Which grades do you use for roasting?
Usually scorched (SW) alongside white whole grades. Scorched kernels roast to an excellent finish and cost less — which is why experienced buyers specify them for roasted product rather than paying a premium for an appearance that roasting changes anyway.
What is the HS code for roasted cashews?
2008.19, covering nuts otherwise prepared or preserved. Raw kernels are 0801.32.
